Chicken Lasagna is a delicious twist on the classic Italian dish, using tender chicken instead of ground beef. Here's a simple and flavorful Chicken Lasagna recipe

 



Ingredients:

  • 9 lasagna noodles (oven-ready or regular, cooked according to package instructions)
  • 2 cups cooked and shredded chicken (you can use rotisserie chicken for convenience)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups ricotta cheese
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (24 oz) jar of your favorite marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté until they become translucent and fragrant.

  3. Stir in the shredded chicken and season with dried oregano, dried basil, salt, and pepper. Cook for a few minutes until the chicken is well coated with the seasonings.

  4. In a medium bowl, combine the ricotta cheese, half of the grated Parmesan cheese, and the egg. Mix well until smooth and creamy.

  5. To assemble the lasagna, spread a thin layer of marinara sauce at the bottom of the prepared baking dish.

  6. Place three lasagna noodles on top of the sauce. Spread half of the ricotta cheese mixture over the noodles.

  7. Add half of the chicken mixture on top of the ricotta layer, and then sprinkle a portion of the mozzarella cheese over it.

  8. Repeat the layers with three more lasagna noodles, the remaining ricotta cheese mixture, the rest of the chicken, and another portion of mozzarella cheese.

  9. Top with the final layer of three lasagna noodles, the remaining marinara sauce, and the rest of the mozzarella and grated Parmesan cheese.

  10. Cover the baking dish with aluminum foil, making sure it's tented so it doesn't stick to the cheese.

  11. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.

  12. Remove the foil, and bake for an additional 10-15 minutes until the cheese on top turns golden brown.

  13. Once done, remove the lasagna from the oven and let it cool for a few minutes before serving.

  14. Garnish with fresh parsley or basil if desired.
