Cashew Curry, is a Delicious and Rich Indian Dish

 


Kaju curry, also known as cashew curry, is a delicious and rich Indian dish typically prepared with cashew nuts and a creamy tomato-based gravy. It's a popular vegetarian dish served in many Indian restaurants and can be enjoyed with rice, naan, or roti. Here's a simple recipe to make kaju curry at home:


Ingredients:

  • 1 cup raw cashew nuts
  • 2 large onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1/4 cup yogurt (curd)
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup fresh cream or heavy cream
  • 1/4 cup milk
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cumin (cumin powder)
  • 1/2 teaspoon ground coriander (coriander powder)
  • 1/4 cup vegetable oil or ghee (clarified butter)
  • Salt to taste
  • Chopped coriander leaves for garnish

Instructions:

  1. Soak the cashew nuts in warm water for about 1 hour. This step will help in making the cashews soft and easy to blend.

  2. After soaking, drain the water from the cashew nuts and grind them to a smooth paste using a little water. Set aside.

  3. In a large pan or skillet, heat the vegetable oil or ghee over medium heat. Add the chopped onions and sauté until they turn golden brown.

  4. Add the ginger-garlic paste to the onions and cook for another 2 minutes until the raw smell disappears.

  5. Now, add the chopped tomatoes, salt, turmeric powder, red chili powder, ground cumin, and ground coriander to the pan. Cook the tomatoes until they become soft and the oil starts to separate from the masala.

  6. Lower the heat and add the cashew paste to the pan. Mix it well with the tomato masala.

  7. Stir in the yogurt and cook the mixture for a few more minutes, allowing the flavors to blend.

  8. Pour in the milk and fresh cream, and continue to stir until the curry thickens and the oil starts to float on top. If the curry is too thick, you can add some water or milk to achieve your desired consistency.

  9. Add the garam masala and mix well. Taste and adjust the seasoning as needed.

  10. Finally, add the cashew nuts to the curry and simmer for another 5 minutes, allowing them to absorb the flavors.

  11. Once the curry reaches the desired consistency, turn off the heat.

  12. Garnish with chopped coriander leaves.

Your creamy and delicious kaju curry is ready to be served! Enjoy it with steamed rice, naan, or roti for a delightful meal.
