Let's make a classic chicken curry:

 Ingredients:

  • 500g boneless chicken (cut into bite-sized pieces)

  • 1-inch piece of fresh ginger (minced)
  • 2-3 medium tomatoes (finely chopped)
  • 2 tablespoons curry powder (you can use store-bought or make your own blend)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to your spice preference)
  • 1/2 teaspoon paprika (optional, for color)
  • 1 cup coconut milk
  • 1 cup chicken broth or water
  • Salt, to taste
  • Fresh cilantro (coriander) leaves for garnish

Instructions:

  1. Heat the vegetable oil or ghee in a large, deep skillet or a pot over medium heat.

  2. Add the chopped onions and sauté until they become soft and translucent.

  3. Add the minced garlic and ginger to the onions. Cook for another minute, stirring to prevent burning.

  4. Add the curry powder, ground cumin, ground coriander, turmeric powder, chili powder, and paprika (if using) to the onion mixture. Stir well to coat the onions with the spices and cook for a couple of minutes until the spices become fragrant.

  5. Add the chopped tomatoes to the pot. Cook until they become soft and start to break down, creating a thick sauce.

  6. Add the chicken pieces to the pot, stirring them into the onion-tomato mixture. Cook for a few minutes until the chicken starts to brown on all sides.

  7. Pour in the coconut milk and chicken broth (or water) into the pot. Stir well, making sure the chicken is fully submerged in the liquid. Bring the mixture to a gentle simmer.

  8. Cover the pot with a lid and let the curry cook on low heat for about 20-25 minutes or until the chicken is fully cooked and tender. Stir occasionally to prevent sticking.

  9. Once the chicken is cooked, taste the curry and adjust salt and spices as needed.

  10. Garnish the curry with fresh cilantro leaves.
