Here's a delicious Seekh Kabab recipe

 



Ingredients:

  • 500g ground lamb or beef (you can also use chicken or turkey)
  • 1 medium-sized onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to your spice preference)
  • 3-4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons chopped fresh cilantro (coriander leaves)
  • 2 tablespoons chopped fresh mint leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon black pepper powder
  • 1 tablespoon lemon juice
  • 1 tablespoon besan (gram flour) or breadcrumbs
  • Salt to taste
  • 2 tablespoons oil
  • Wooden skewers (pre-soaked in water for 30 minutes to prevent burning)

Instructions:

  1. In a large mixing bowl, add the ground meat, chopped onions, green chilies, minced garlic, grated ginger, fresh cilantro, mint leaves, ground cumin, ground coriander, garam masala, turmeric powder, red chili powder, black pepper powder, lemon juice, besan or breadcrumbs, and salt.

  2. Mix all the ingredients thoroughly with your hands to ensure even distribution of spices and flavors. If the mixture feels too wet, you can add a little more besan or breadcrumbs to bind it together.

  3. Cover the mixture and let it marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.

  4. Preheat your grill or barbecue to medium-high heat.

  5. Take the wooden skewers and shape the marinated meat mixture around each skewer, forming long, cylindrical seekh kababs. You can make them as thick or as thin as you prefer.

  6. Brush the kababs with oil to prevent sticking and to promote even browning.

  7. Place the skewers on the grill and cook the seekh kababs for about 8-10 minutes, turning them occasionally, until they are cooked through and have a nice charred exterior.

  8. Once cooked, remove the seekh kababs from the grill and serve them hot with some green chutney, sliced onions, and lemon wedges.
