Chinese fried rice:

 


Ingredients:

  • 2 cups cooked rice (preferably leftover rice)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (carrots, peas, corn, etc.)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: 1 cup cooked meat or shrimp (chicken, beef, pork, or shrimp)

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium heat.

  2. Add the minced garlic and diced onion to the skillet and sauté for about 2 minutes until they become fragrant and slightly softened.

  3. If you're using cooked meat or shrimp, you can add it to the skillet at this point and cook it until heated through.

  4. Push the garlic, onion, and meat (if using) to one side of the skillet, creating a space for the eggs.

  5. Pour the beaten eggs into the empty space and scramble them until they're fully cooked.

  6. Add the mixed vegetables to the skillet and stir-fry for about 2-3 minutes until they're slightly tender.

  7. Add the cooked rice to the skillet, breaking up any clumps with a spatula or wooden spoon. Stir-fry the rice with the vegetables and eggs for about 5 minutes, ensuring everything is well combined.

  8. Drizzle the soy sauce over the rice and stir-fry for an additional 2-3 minutes, until the sauce is evenly distributed.

  9. Season with salt and pepper to taste, keeping in mind that soy sauce is already salty.

  10. Remove the skillet from the heat and serve the Chinese fried rice hot. You can garnish it with chopped green onions or cilantro if desired.
