Here's a classic recipe for chicken soup:

 


Ingredients:

  • 1 whole chicken (about 3-4 pounds), cut into pieces
  • 8 cups chicken broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup egg noodles (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, add the chicken pieces and cover with chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for about 30 minutes until the chicken is cooked through and tender.

  2. Remove the chicken pieces from the pot and set them aside to cool. Once cooled, shred the chicken into bite-sized pieces and discard the skin and bones.

  3. Skim off any foam or fat from the surface of the broth. Add the chopped onion, sliced carrots, sliced celery, minced garlic, bay leaf, dried thyme, salt, and pepper to the pot. Stir to combine.

  4. Bring the soup to a simmer over medium heat and cook for about 20 minutes until the vegetables are tender.

  5. If desired, add the egg noodles to the pot and cook according to the package instructions until al dente.

  6. Once the noodles are cooked, return the shredded chicken to the pot and simmer for an additional 5 minutes to heat through.

  7. Taste the soup and adjust the seasoning with salt and pepper if needed.

  8. Remove the bay leaf from the pot before serving.

  9. Ladle the chicken soup into bowls and garnish with fresh chopped parsley.
