Here's a classic recipe for a delicious cheesecake:


  

 Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 32 ounces (900 grams) cream cheese, softened
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour

For the topping:

  • 1 cup sour cream
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch (23 cm) springform pan with butter or cooking spray.

  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand. Press the mixture into the bottom of the prepared springform pan, forming an even crust. Place it in the refrigerator to chill while you prepare the filling.

  3. In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Make sure to scrape down the sides of the bowl as needed.

  4. Add the sour cream and vanilla extract to the cream cheese mixture. Beat until well combined. Gradually add the flour and mix until just incorporated. Be careful not to overmix.

  5. Pour the cheesecake filling over the chilled crust in the springform pan. Smooth the top with a spatula to ensure an even layer.

  6. Bake the cheesecake in the preheated oven for about 60-70 minutes or until the edges are set and the center is slightly jiggly. The cake will firm up as it cools.

  7. While the cheesecake is baking, prepare the topping. In a small bowl, whisk together the sour cream, granulated sugar, and vanilla extract until smooth.

  8. Remove the cheesecake from the oven and carefully spread the sour cream topping over the hot cheesecake. Return it to the oven and bake for an additional 5 minutes.

  9. Remove the cheesecake from the oven and allow it to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours or overnight before serving.

  10. Before serving, carefully remove the sides of the springform pan. Slice and serve your delicious homemade cheesecake!
