Here's a recipe for potato kofta, a delicious Indian dish:

 


Ingredients for Potato Kofta:

  • 4 medium-sized potatoes, boiled and mashed
  • 1/2 cup bread crumbs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for frying

Ingredients for Gravy/Sauce:

  • 2 tablespoons oil
  • 1 medium onion, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. In a large bowl, combine the mashed potatoes, bread crumbs, all-purpose flour, ginger-garlic paste, red chili powder, garam masala, and salt. Mix well to form a dough-like consistency.

  2. Take a small portion of the potato mixture and shape it into a round or oval-shaped ball. Repeat with the remaining mixture.

  3. Heat oil in a deep pan over medium heat. Once the oil is hot, carefully add the potato koftas into the oil. Fry them until they turn golden brown and crispy. Remove the koftas using a slotted spoon and drain them on a paper towel to remove excess oil.

  4. For the gravy, heat oil in a separate pan over medium heat. Add cumin seeds and let them splutter. Then, add the chopped onions and sauté until they turn golden brown.

  5. Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.

  6. Add the tomato puree and cook until the oil separates from the mixture. Stir occasionally to prevent sticking.

  7. Now, add coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes to allow the spices to blend together.

  8. Add water to adjust the consistency of the gravy. Bring it to a boil and then reduce the heat to simmer for about 10 minutes.

  9. Once the gravy is ready, add the fried potato koftas to the gravy and simmer for another 5 minutes.

  10. Garnish with fresh coriander leaves.

Your delicious potato kofta is now ready to be served. It pairs well with steamed rice, naan bread, or roti. Enjoy your meal!
