Ingredients:
- 8 slices of bread (white, brown, or multigrain)
- 1 cup shredded mixed vegetables (carrots, bell peppers, cabbage, etc.)
- 1/2 cup mayonnaise
- 1 tablespoon mustard sauce (optional)
- 1 tablespoon finely chopped onions
- 1 tablespoon finely chopped cilantro (coriander leaves)
- 1 tablespoon finely chopped green chilies (adjust to your spice preference)
- Salt and black pepper to taste
- Butter or margarine for spreading on bread (optional)
Instructions:
- In a mixing bowl, combine the shredded mixed vegetables, finely chopped onions, cilantro, and green chilies. 
- Add the mayonnaise to the vegetables and mix well. If you like a little tanginess, you can also add mustard sauce at this point. 
- Season the mixture with salt and black pepper according to your taste. Mix everything thoroughly until well combined. 
- Lay out the slices of bread on a clean surface or a cutting board. 
- If you prefer, you can spread a little butter or margarine on one side of each slice. This step is optional, but it adds a nice richness to the sandwich. 
- Divide the veg mayo mixture evenly among four slices of bread. 
- Place the remaining four slices of bread on top of the veg mayo mixture, making sandwiches. 
- Press down gently on each sandwich to make sure they hold together. 
- You can now cut the crusts off the sandwiches if you prefer a neater look. Cut each sandwich diagonally to make two triangular halves or into smaller bite-sized pieces. 
- Your veg mayo sandwiches are ready to serve! You can enjoy them as is or pair them with some potato chips, salad, or a refreshing beverage.
