Here's a simple and delicious recipe for a veg mayo sandwich

 




Ingredients:

  • 8 slices of bread (white, brown, or multigrain)
  • 1 cup shredded mixed vegetables (carrots, bell peppers, cabbage, etc.)
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard sauce (optional)
  • 1 tablespoon finely chopped onions
  • 1 tablespoon finely chopped cilantro (coriander leaves)
  • 1 tablespoon finely chopped green chilies (adjust to your spice preference)
  • Salt and black pepper to taste
  • Butter or margarine for spreading on bread (optional)

Instructions:

  1. In a mixing bowl, combine the shredded mixed vegetables, finely chopped onions, cilantro, and green chilies.

  2. Add the mayonnaise to the vegetables and mix well. If you like a little tanginess, you can also add mustard sauce at this point.

  3. Season the mixture with salt and black pepper according to your taste. Mix everything thoroughly until well combined.

  4. Lay out the slices of bread on a clean surface or a cutting board.

  5. If you prefer, you can spread a little butter or margarine on one side of each slice. This step is optional, but it adds a nice richness to the sandwich.

  6. Divide the veg mayo mixture evenly among four slices of bread.

  7. Place the remaining four slices of bread on top of the veg mayo mixture, making sandwiches.

  8. Press down gently on each sandwich to make sure they hold together.

  9. You can now cut the crusts off the sandwiches if you prefer a neater look. Cut each sandwich diagonally to make two triangular halves or into smaller bite-sized pieces.

  10. Your veg mayo sandwiches are ready to serve! You can enjoy them as is or pair them with some potato chips, salad, or a refreshing beverage.
