Ingredients:
- 1/2 cup Sabudana (Tapioca pearls)
- 4 cups water
- 1/4 cup sugar (adjust according to your taste)
- 1/2 cup coconut milk
- 1/2 teaspoon cardamom powder
- 1 tablespoon soaked and crushed almonds or other nuts (optional)
- Ice cubes
- Mint leaves for garnish
Instructions:
Rinse the Sabudana (Tapioca pearls) under running water to remove excess starch. Then, soak them in water for about 2 hours or until they become soft and transparent.
Once the Sabudana is soaked, drain the water and set them aside.
In a blender, add the soaked Sabudana, sugar, and coconut milk.
Blend the mixture until it becomes smooth and well combined.
Add the cardamom powder and crushed almonds (if using) to the blender and give it another quick blend to incorporate the flavors.
Now, take a strainer or sieve and strain the mixture into a large pitcher or bowl. This step will remove any coarse bits of Sabudana, giving you a smooth drink.
Add 2 cups of water to the strained mixture and mix well. You can adjust the water quantity based on your desired consistency – thicker or thinner.
Taste the drink and adjust the sweetness or cardamom flavor according to your preference.
Add ice cubes to the pitcher or serve the drink over ice in individual glasses.
