Here's a Delicious Mix Veg Bhuna Dhaba Style Recipe for You to Try:




Ingredients:

  • 2 cups mixed vegetables (carrots, beans, peas, cauliflower, potatoes, etc.), chopped into small pieces
  • 1 large onion, finely chopped
  • 2 large tomatoes, finely chopped
  • 1/2 cup bell peppers (capsicum), chopped
  • 2-3 green chilies, finely chopped (adjust according to your spice preference)
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup fresh coriander leaves, chopped
  • 1/4 cup vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • Water as needed
  • Lemon wedges and fresh coriander leaves for garnish

Instructions:

  1. Heat the vegetable oil in a large pan or wok over medium heat. Add the cumin seeds and let them splutter.

  2. Add the finely chopped onions and sauté until they turn golden brown.

  3. Stir in the ginger-garlic paste and green chilies. Cook for a minute or until the raw smell disappears.

  4. Add the chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.

  5. Now, add the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for a few minutes.

  6. Add the mixed vegetables and chopped bell peppers to the masala mixture. Mix everything thoroughly, ensuring the vegetables are well coated with the spices.

  7. Pour a little water into the pan (about 1/4 to 1/2 cup), cover it with a lid, and let the vegetables cook on low to medium heat. Stir occasionally to prevent sticking.

  8. Cook until the vegetables are tender but still have a slight crunch. Be careful not to overcook them.

  9. Once the vegetables are cooked, sprinkle garam masala over them and give it a final mix.

  10. Garnish with fresh coriander leaves and lemon wedges.
