Here's a simple recipe for a delicious bitter gourd dish called "Stuffed Bitter Gourd"

 



Ingredients:

  • 4 medium-sized bitter gourds
  • 1 cup finely chopped onions
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

For stuffing:

  • 1 cup crumbled paneer (Indian cottage cheese)
  • 1/4 cup roasted peanuts, coarsely ground
  • 2 tablespoons finely chopped cilantro
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions:

  1. Wash the bitter gourds and cut off the ends. Make a lengthwise slit on one side of each bitter gourd, but make sure not to cut them into two halves completely. Remove the seeds and pith from inside, creating a hollow space for stuffing. Set aside.

  2. In a bowl, mix together crumbled paneer, roasted peanuts, cilantro, lemon juice, and salt to taste. This will be the stuffing for the bitter gourds.

  3. Stuff each bitter gourd with the paneer mixture evenly.

  4. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn golden brown.

  5. Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.

  6. Reduce the heat to low and add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Stir well to combine the spices with the onions.

  7. Place the stuffed bitter gourds in the pan and gently sauté them for a few minutes, turning them occasionally, until they start to brown.

  8. Cover the pan with a lid and let the bitter gourds cook on low heat for about 15-20 minutes, or until they become tender. Make sure to turn them occasionally to cook evenly.

  9. Once the bitter gourds are cooked, remove them from the pan and garnish with fresh coriander leaves.

  10. Serve hot with roti or rice. Enjoy your delicious stuffed bitter gourds!

Note: If you prefer a less bitter taste, you can soak the bitter gourds in salted water for about 15 minutes before stuffing and cooking them. This will help reduce the bitterness.
