Here's a simple recipe for making chicken meatballs at home

 


Ingredients:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg, lightly beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for some heat)
  • 2 tablespoons olive oil (for cooking)

Instructions:

  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, oregano, salt, black pepper, and red pepper flakes (if using). Mix everything together until well combined.

  2. Using your hands, shape the mixture into small meatballs, about 1-1.5 inches in diameter. You should get around 20-24 meatballs.

  3. Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs to the pan in a single layer. Cook them for about 8-10 minutes, turning occasionally, until browned on all sides and cooked through. You may need to cook them in batches depending on the size of your skillet.

  4. Once the meatballs are cooked, remove them from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

  5. Serve the chicken meatballs with your favorite sauce or alongside pasta, rice, or salad. They also make great appetizers or can be used in sandwiches.
