Ingredients:

• 2 cups heavy cream
• 1 cup whole milk
• 3/4 cup granulated sugar
• 1/4 cup unsweetened cocoa powder
• 4 ounces dark chocolate, chopped
• 4 large egg yolks
• 1 teaspoon vanilla extract

Instructions:

1. In a medium saucepan, combine the heavy cream, milk, sugar, and cocoa powder. Place the saucepan over medium heat and whisk the mixture until it begins to steam and small bubbles form around the edges. Do not let it boil.

2. Remove the saucepan from the heat and add the chopped dark chocolate. Stir until the chocolate melts completely and the mixture is smooth.

3. In a separate bowl, whisk the egg yolks until they are pale in color. Slowly pour about 1/2 cup of the chocolate mixture into the yolks, whisking constantly. This helps temper the eggs and prevent them from curdling.

4. Pour the egg mixture back into the saucepan with the remaining chocolate mixture, whisking constantly.

5. Place the saucepan back on the stove over low heat. Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes.

6. Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

7. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

8. Transfer the ice cream to a lidded container and freeze for an additional 2-3 hours, or until firm.
