Here's a Simple Recipe for Making Kulfi, a Popular Frozen Dessert:




 Ingredients:

  • 2 cups full-fat milk
  • 1/2 cup condensed milk
  • 1/4 cup sugar (adjust according to your taste)
  • 1/4 cup khoya (milk solids) or milk powder
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Chopped nuts (almonds, pistachios, cashews) for garnishing

Instructions:

  1. Preparation: Soak the saffron strands in a tablespoon of warm milk and set aside. Also, chop the nuts finely for garnishing.

  2. Cooking the Mixture: In a heavy-bottomed pan, pour in the milk and bring it to a boil over medium heat. Stir occasionally to prevent sticking.

  3. Reducing the Milk: Once the milk starts boiling, reduce the heat to low and continue to cook. Keep stirring occasionally to prevent the milk from sticking to the bottom of the pan. This process can take around 30-40 minutes. The milk will gradually thicken and reduce in volume.

  4. Adding Condensed Milk and Sugar: Once the milk has significantly reduced, add the condensed milk, sugar, and khoya (or milk powder). Mix well to combine.

  5. Flavoring: Add the cardamom powder and the soaked saffron along with the milk. Stir everything together.

  6. Cooking Further: Continue to cook the mixture on low heat, stirring constantly. Cook until the mixture becomes even thicker, almost like a custard consistency. This could take another 10-15 minutes.

  7. Cooling and Filling: Remove the pan from heat and allow the mixture to cool down. Once it's cooled, pour it into kulfi molds or small disposable cups.

  8. Freezing: Sprinkle chopped nuts on top of each filled mold. Insert sticks or popsicle sticks into the center of each mold.

  9. Freeze: Place the molds in the freezer and let the kulfi set for at least 4-6 hours, or preferably overnight.

  10. Serving: To serve, take the molds out of the freezer and let them sit at room temperature for a few minutes to make it easier to remove the kulfi from the molds. Gently unmold the kulfi by running the molds under warm water for a few seconds.

  11. Garnishing: Once unmolded, you can garnish the kulfi with some more chopped nuts before serving.
